over on LS1Tech is a few writeups about building a standalone harness. You can also read about how to do one in the new CarTech book "how to swap gm LS-Series engines"

Buy an electrical manual for the 2000 vehicle, and the electrical manual for your vehicle, and start soldering!!! What vehicle is it going into? You still will need to drop some $$$ to get those things tuned out. Along with not having them in the harness physically they must be programmed out of the PCM as well.
