Does that electric fan harness work for fans out of any style of car/truck? It says camaro fans, but could I use 05 truck fans?

The connector that is on the harness is made to fit the F-Body electric fans. If you want to switch out the fans to something else your more then welcome to, but you will need to cut the connectors and soder in the correct ones for your fan option.
