Not much. The 65 is the same as the 60 you have but with oiling improvements and 5-pinion planetary sets. It's a direct swap. Of course you can just build your 60 with 65 planets along with a beast reaction sun shell and good clutches and 2-4 band. Throw in an HD-2 shift kit and Corvette servo piston kit and you'll be fine for what you want. The 70 has a few minor differences such as a different pump and one extra sensor that needs to be wired in. Also requires a tune change but you have to get a tune anyway to properly fuel map the 6.0 swap.
An underpowered 4.8L engine is going to help the 60e transmission live longer. A nice strong 6.0L engine is going to destroy your 60e due to the increase in torque and the heavy beast it's going to be pushing. Best bang for the buck and reliability is going to be swapping to the 80e. Its a bit more work and money but worth it if you're keeping the Burb for 5 or so more years, by then you might start wearing stuff out if it gets some serious use. Either way you go you really need to get a tune to adjust the fuel to the new engine size. If you get a 6L/80e drop-out with wiring and PCM you may be able to get away with having the VATS disabled and using the new PCM to run the new engine/trans in your vehicle, if you get a compatible year setup. Even without the harness/pcm from the donor setup, you can have your original 4.8L PCM tuned by Nelson to control the new setup and 80e trans.
