Either will work but I'd consider a 6.0L first. They are all the same engine dimensionally. You'll pay a little more for the 6.0 but it will be worth it for the extra torque.

Ditto on the 6.0. If you are going to change it, almost not worth it just to go to a 5.3. Just find a 6.0.

I don't know your financial situation so I'll throw this in there too, you can buy a 402" stroker short block to add to your parts you already have for some awesome power and they are just over $3000 without exchange. Shop around for best prices or get quotes.

Any idea what kinda gas mileage i'd be getting out of the 6.0..... and would my tranny and rearend hold up to the 6.0? Also can anybody recomend a tuner near houston that could redo my computer?

Is SanAntonio close enough to Houston for you? It's worth the drive in my opinion. I wish it were closer to me.

Yeah, the transmission and rear end can hang with the 6.0 unless you're just pounding the crap out of it. If you decide to do that, get the trans beefed up. My 60E has an LS1 behind it and it gets sprayed with 150-200 HP boosts of NOS.
