I will be buying new head gaskets soon when i put the new heads on I will be getting the 5.7 head gasket kit, so my question is how much thicker or thinner is the 5.7 to the 5.3 head gasket. thanks

You can buy cometic multi-layer-steel MLS gaskets and specify how thick you want them. They have quite a collection of thicknesses. Thanks to NITROUS for that tidbit of information.

I believe the compressed gasket thickness for both is somewhere around .041"

RHB is right , If you are worried about CR changes Cometic has what you need. I believe GM has .040", .050" and .060" gasket sizes.
