On lower profile tires, it'll be harder to get the bead to seat, but it'll stay that way once it's on. A wider rim will just give you better road contact. Your outer 1/2 inch might bubble out, but lowering psi should fix that a little.

My cousin has a 81 malibu with a 502 and 2 stage nitrous and he only runs a 10.5 slick on stock suspension...I can't imagine you needing much more then that.
That size was the only size I could find to keep it close to the 28" tall tire, I didnt wanna go to a 26" tall tire and lose any mph
