either choice will work well. my 5.3 was a runner in stock form. if i had known what i know today i would probably not of got my 6.0 and stayed with the 5.3.

from a performance point of view...the larger motor will always have more torque. the HP between the two will be close with the same mods.
    2002 Lightning - GT headed 5.5Litre w/ Twin 7665s
    2002 Silverado - 427Lsx w/ Twin gt4202s
    2010 Silverado crewcab Z71 - 5.3litre w/ procharger
    2000 Wrangler - 5.3litre with some stance
    2014 Xsport- 3.5 Eco boost
    412 Motorsports

it ain't that I'm too big to listen to the rumors, It's just that I'm too damn big to pay attention to 'em..That's the difference

Not really. A cammed full bolt on 5.3 will always put out less than the same setup on a 6.0 you could probably get another 50hp out of the extra cubes.
a 4.8 to 5.3 would be marginal, but noticeable. 5.3 to 6.0 would be night and day. As long as the 6.0 was healthy.

theres a few 5.3s making more power then 6.0s. its all in how the parts are chosen.
