I am fairly mechanical, so that part of a swap doesn't scare me much. Also, I have already deleted the factory A/C, so if anybody has any tips on how to delete the A/C from the 6.0 and what belts/tensioners you have to put back in its place, I've got a pen and paper ready.

Greg's (RedHeartBeat) write up sticky should have most of the stuff you need considering most of his swaps have been in early 90s trucks. I don't see why it would be any different as far as the wiring is concerned for the Blazer. One thing you need to think about on the mechanical side is how you're going to mount your 80e up to the K5 t-case. I'm sure its setup for a 700r4 or 4l60e, so the inputs are going to be different. You'll have to change the output on the trans or input on the tcase. Personally, I'd be going for the t-case. Look for the write up from Redheartbeat and it should tell you a lot about the wiring. You'll probably want to go ahead and splurge for a stand alone harness from a reputable source, then add what is needed from there.
