Do you have ARP studs in the crankshaft? It should have come with washers for the pan. They're about .090" thick. Another thing you have to do after shimming the windage tray is the height of the oil pickup tube. It will be moved closer to the bottom of the pan and that is not good. The pickup tube should have about 1/4" clearance to the floor of the oil pan. Take some modeling clay or something like than and stick it to the pickup and then put the pan on with a gasket in place and then press the pan down firmly to check the clearance to the floor of the pan. Too small and you'll cavitate the oil flow.
