This might sound dumb but can I run my motor without a mass air sensor?

yes, it will run but will throw codes unless you get someone like Allen to tune it up "speed density" style.

Which would be the best for motor sensor or no?

ahhh yes SD tuning! I have been reading on tuning for over a year now and it has finally come time for me to dig in, got the VE alot closer last week and the throttle response on the low end that was lost with the cam is slowly coming back!

From what I have read though, if the weather changes rapidly in your parts like it does here in Arkansas, I wouldnt do it unless you need to (too much airflow for maf or trouble with fueling for large cam), the MAF helps compensate for some of that change, it houses the IAT sensor which SD mode doesnt use.
