Can't seem to keep the clutch engaged for some reason. I can go into HPTuners and engage it under the scanner with no issues at all and the truck idles great. Without the scanner override, the clutch engages and disengages every 5 seconds driving down the road. In park, there are no idle issues either, the A/C stays engaged. Pressures are well within operating limits 35/180. I wonder if something in my tune is disengaging it. Any thoughts? Maybe a faulty pressure switch? I know the clutch is good.

That has to be hard on the a/c clutch.

Yah, I've been driving without A/C until I figure this out.

Sounds like it's low on gas. The faster you turn it, the lower the suction pressure is because the compressor pumps harder. At idle the gas that you do have is enough to keep the low pressure switch made. At some certain RPM the suction pressure drops enough to break the low pressure switch. The compressor shuts off, the system equalizes, the low pressure switch makes again, thus the cycling. A restriction (plugged orifice tube or/and expansion valve) will cause the same symptoms.
