Go 6.0!! Honestly if there's nothing wrong with the 6.0 short block I wouldn't tear it apart. I have a ccsb z71 with a cammed/milled heads/stalled 5.3/4L60 and 3.42s, I avg 10 in town (because it's a brick with highway gears) and 16-17 on highway. I guarantee you won't regret the 6.0 swap
Truck: 05 GMC CCSB SLT Z71,
    Go Faster: 5.3, 219/227 .607/.614 112, milled heads, eBay CAI, Circle D 2800, 3030 Built 60E, E-Fans, 3030 Tuned, LT's, Spintech Muffler, DuraGrip w/ 3.73's
Look Better: 10K HID's lows & fogs, tinted Chevy tails

I fell off the fence on the 6.0 side, I sent a P.M. to beertestr for his mounts, going to get wire harness this next weekend, (hopefully)
then try to get harness all done, and order stuff to freshen up engine while doing harness, after harness is complete, freshen engine up.
Cant plan to far ahead I'm not that smart, so I'll leave it at that for now. Thanks for the replys Guys

Found a 04 lq9 intake on craigslist for $50.00, fuel rails, injectors, drive by wire throttle body. Dont think I'm going drive by wire though, thinking that
would be a little more complicated, and i like to be able to work the throttle body by hand when I'm under the hood. Had to drive almost 3 hours to get it though.
But I figured the truck intake would be better for what I want, and save the LS6 intake for the S10 if I ever decide to go EFI.

Keep the motor as stock as possible, if you can go 4L60E instead of 700R4, and keep the gear ratio reasonable (i.e. keep the 3.42's) and you will do very well. I mention the 60E to try to capitalize on better tunability to TCC lockup and the shift map. I kept my LR4 bone stock and saw 16mpg mixed driving with 285/70-17's. If you keep your foot out of it, the 6.0 won't be much different.... until you put your foot in it and feel the extra 70+ ft# torque.

I built my 94SCLB Z71 with a free 4.8L as a DD, pretty much no "show" just an updated DD. Loved it, I'd still have it if I didn't desire a Crew cab for family hauling. I put 30k miles on it, and the current owner is hauling a 5th wheel (!!) with it.... with a 4.8 and 3.73's.
