Its really not hard. You log the MAF Hz, and ad adjust the fuel trims to zero it out for part throttle, then for full throttle you log the AFR, again, adjust the fuel trims to bring it to your target AFR (say, 12.5:1). Doing the spark tables requires a little more trial and error, but its not that bad.
