As for the discoloration it's probably because the resonator has a wider diameter than the rest of the piping. Which means that there is more metal to distribute the heat and results in less discoloration.

They appear to be quality built headers and you can't really screw up long tube design.

I wonder if the resonators are enough of a restriction to allow using the rear O2's to eliminate the Check Engine light? Theoretically, they should.

I'm definitely please with their fitment and quality, and I'd guess you were right about why the resonators themselves aren't discolored...your theory makes sense.
