This is an extremely bad time of year for Crawfish. They're only good up until about july, that's when they start getting really small. You'll need a Boiling pot, LOTS of crab boil (big bottles from sams), Corn on the Cob, small potatos, Onions, I like to put giant mushrooms in mine. and A LOT of Beer!!!

I'm sure it wouldnt be hard to get some of these guys gathered for some mudbugs. I've found the best time is mid march through late april. May is decent, june they start gettin really small.

Never too late to start planning something. How about out at Canyon Lake?

I'd say 90% of people boil them. I'm a big fan of just steaming them to prevent waterlogging them and to help Trap the flavor into them instead of it all being in the water when you boil them.
Also I prefer to order seasoning online with very little salt. Most of the OTC crab boil is mostly salt which is cheap and flavorless. You can order it online without salt n more seasoning (also you can order it with whatever u want which is kinda nice) and use less due to the higher seasoning content which ends up lasting longer!

Everyone likes to do theirs different, so I thought I'd share how I like to do it.
Good luck n keep us posted!

We had 3 boils this year and used Donnies Delta seasoning and it was some of the best I've ever cooked. We do the small ears of corn, new potatoes, sausage and sometimes mushrooms, brussel sprouts or sweet potato. This year was the first time we did the last two and the sweet potato is what suprised me the most. Remember wide open rolling boil, drop in the craw and boil wide open for 7 minutes, kill the heat and let it set for 10 minutes, dump them in an ice chest and cover them with either Tonys or Slap yo momma and enjoy.
