Fan clutch may be going in and out. Best bet is to drive it a bit and when. Is starts getting hot use a temp gun to get some readings. Doubt its a bad sensor but u could always shoot the ohm load with a meter. But those tend to either work or not work. U runnin a pre mixed coolant? Hope its not a headgasket prob. But id think id be having other signs. Have u ever had coolant in Ur oil when its been changed
Today 03:25 am 6 stringer o thats a good point, its ok ill just add a blinker fluid cooler
Today 03:24 AMtruckinL33 that's not a good place for it, you can overheat your blinker fluid with the capacitor
Today 03:23 AMtruckinL33 i need them for when i go back to 1985
Today 03:23 AM6stringer i mounted my flux capacitor next to my blinker fluid resevoir
Today 03:22 AMtruckinL33 me too, right next to my flux compasator!
Today 03:22 AM6stringer hey gear oil needs to be cooled, i have front and rear diff coolers

If it just spikes up and then back down quickly I bet it's your thermostat. If it spikes up and down in less than about 30 seconds I would just swap it out as a start.

undo the belt, i bet the water pump bearings are dragging, i had the same problem.. a water pump doesnt have to leak to go bad also like mentioned check the fan clutch

make sure you have enough coolant in the truck
if youre using the dexcool and have alot of miles flush the rad im willing to bet its clogged
check to see if water pump is good
    check Tstat

When was the last time you changed that stuff? Just for good measure I would replace the t stat, water pump, coolant, and lines.
