Don't buy one without an oil pan from a salvage yard. It may have been sold seperately but I'd steer clear of it.

    why, is that?
i have located one that is a 02 escalade and it has the 317s and the crank turns over fine and there was no water in the oil?

Unless you know exactly why the pan was pulled I'd just steer clear. It may be because there was a noise and they investigated it and failed to re-install the pan. How was the engine stored, on a stand? Without the oil that was in it still being in there, how can you check the oil condition? No smell test, no sample test able to be run by a lab, who knows the truth about what went on with the engine. They may have just pulled the pan to sell it seperately but its not worth the risk to me unless they sell it to you for about $500 for the risk or they give you a 90 day warranty active from the day the engine starts in your conversion, not the day it leaves their yard.
