Try unplugging the o2 sensors and running it down the road, it will stay in open loop. If runs fine you know it's not fuel pressure, or ignition related, but something sensor related.

I've got the hotrod/h3 pan. It's really is only about 1" shorter than the truck pan. It's also about half the price of an f-body pan. There's a few around here running sectioned truck pans.
The regular ol cable 5.3/6.0 cable bracket that goes on the intake will work, and as the others said, a vortec 305/350 cable.
