Flashing engine light, restarted and it went off. Dirty MAF?

Id start with cleanin th Maf with some crc Maf cleaner.

A dirty MAF won't cause misfires or a flashing SES light. You have a more serious problem. Does the truck still have the factory catalytic converters? If so, better have them checked.

Truck is 101% stock. Plugs, wires, cats, etc are all stock. Only oil & filter changes as required.
It was missing out during a cold (cold for Texas) start @ about 28 degrees. Sounded like it had a nasty cam; gave it some gas & it cleared up.

put some new plugs in it, clean the MAF, make sure your plug wires are good. no popped fuses. Clear the DTC's then see what happens

Yeah, flashing SES due to the misfire means the cats are taking a beating.
