16x8 should be good. Stock backspacing is 5" on a 16x7, so if you get a 16x8 with 5" backspacing it will stick out 1" more than stock. The less backspacing the more the wheel will stick out like the cars you see in Mexico(no offense):

It would only be .5" more on each side rather than 1" on the outside of the rim.
You're going to have a hard time finding any decent aluminum aftermarket rims with less than 4.5" of backspacing. If you do find some tell us all, because we are forced to run 16x10 rims with 4.5" of backspacing on our drag radials.
On a 285/75/16 you could run either an 8 or a 10. I've seen both done many many times and it looks good either way.
Personally I would stick with the 8" wide rims just because you can't find a 10" with less than 4.5" of backspacing and that will look a little silly with only 32.8" tires on the truck.
How 1/2" on each side? If you have two rims with the same backspacing but different widths, the wider rim will have more of a "dish" on the front side because there is more wheel.
