I have a 01 2500 HD with stock rims and Nitto Terra Grappler AT's, I was wondering if I went to a 17x8 rim with maybe a 275/70 or 285/70/17 would I have any rubbing. I have the torsion bars turned up to level it out in the front.

I'm no expert on clearances, but I don't think those are large enought to rub on that truck.
No more trucks, but this is what I used to have. 2000 GMC Sierra, 6.0L-LQ4, Built 4L60, LS6 Cam, The Other Guys Headers, 3 inch exhaust and 7 chamber flowmaster, 43lb injectors, Nelson Tuning, Drop - 3/4 McGaughys Spindles, Bell Tech Shackles & Hangers. Best time 13.59 @ 106

What would be the correct backspacing for them to fit, I don't really know that much about it.

You should be fine with 8" wheels as long as the back spacing doesn't exceed 4". I'm running 9.5" on the front of my truck with 5" back spacing and had to modify the upper and lower A-arms because they were hitting my rims. The only concern I would have is if you put lift or drop spindles on your truck, then you'd change the centerline and they could possibly rup the A-arms.

I've got Nitto Mud Grapplers on my 2002 Z71 that are 33x12.50 R 20 and I have the torsion bars cranked up all the way and haven't had any rubbing yet.
